When I was growing up we were kind of poor, and with 4 children, and two parents, that was a lot of mouths to feed. Going out for breakfast was a special treat that we didn't get to do very often. Usually mom, and sometimes dad would make a big breakfast on Saturday morning. We had traditional basics, so eggs Benedict was something I wasn't introduced too until I was a young adult. When I first tried it I fell in love with the thick, rich, and creamy hollandaise sauce. I had it served with various different meats under the eggs, and no matter the meat, the hollandaise makes it as great tasting as the first time. Hollandaise sauce can vary from chef to chef, but a thick texture, whit a very slight burst of hot pepper is my favorite.

Cole slaw is the quintessential summer salad. Every cookout, or picnick I've ever been to has had some form of cole slaw. There are various different ways to make it, but my personal favorite is KFC's version. This is the recipe I was raised up on. Mom would make huge bowls of it almost weekly in the summer months. It was so refreshing to look into the fridge for something to snack on, and find a large bowl chilled to perfection. I'd scoop up several spoonful into a bowl, and eat it with crackesr. It's a crisp, and refreshing salad on any hot summer day.
